Ingredients
For the Parmesan Crusted Chicken:
1.25 lbs chicken cutlets (I had 4)
salt and pepper
1 sprig fresh rosemary
1 cup grated or zested parmesan cheese
2 eggs
1 cup panko bread crumbs
1/4 cup olive oil for frying, and more as needed

FOR CHICKEN
3-4 boneless skinless chicken breasts (about 1-1/2 pounds), pounded 1/4"-thick*
Salt and freshly ground black pepper
2 tablespoons vegetable oil
2 tablespoons olive oil
Lemon wedges, for serving

METHOD

Preheat oven to 425°.

Combine Hellmann's® or Best Foods® Real Mayonnaise with cheese in medium bowl. Arrange chicken on baking sheet. Evenly top with Mayonnaise mixture, then sprinkle with bread crumbs.

Bake until chicken is thoroughly cooked, about 20 minutes.
