Cheesy Chicken Fritters Recipe
This easy chicken fritters recipe takes just 30 minutes to make. It's a healthy and delicious Keto recipe, and it's also perfect for meal planning.

Ingredients
Ingredients for Chicken Fritters:
1 1/2 lbs chicken breasts (3 large)
2 large eggs
1/3 cup mayonnaise
1/3 cup all-purpose flour or cornstarch or potato starch for gluten free
4 oz mozzarella cheese (1 1/3 cups shredded)
1 1/2 Tbsp chopped fresh dill
1/2 tsp salt or to taste
1/8 tsp black pepper
2 Tbsp Extra light olive oil to saute (or any high heat cooking oil)

Instructions
Combine and mix all the ingredients together. Place in the fridge for at least 2 hours or even best overnight.
Preparation:
Heat your your frying pan on medium-high and oil it with 1-2 TBS of oil. Reduce heat to medium.
Scoop a large tablespoonful of the chicken mixture and place it on the frying pan. Tip: Use a help of spatula and mold it into a round shape. Press lightly
Depending on the size of your frying pan, you should have 4 chicken fritters per pan.
Fry for 3 minutes per side or till golden brown color and the fritter is cooked through. Tip: For faster results you can use two frying pans.
Remove from pan onto the plate and start enjoying immediately
